Shrikhand is a yogurt-based traditional sweet dish famous in states of Gujarat and Maharashtra. This creamy and delicious dessert is easily made from yogurt (Curd) and sugar with other ingredients such as saffron, cardamom and pistachios added to enhance its taste.

Shrikhand can of many flavors such as cardamom, mango or any other flavor. Here, I have made cardamom flavored shrikhand but if you want any fruit-flavored shrikhand such as mango, add fruit pulp after beating hung curd.

Stepwise recipe to make shrikhand:

  1. Place a strainer over a large mixing bowl.
  2. Line the strainer with a cheesecloth or kitchen towel and pour 2 cups of fresh curd over it.
  3. Gather all the sides of cheesecloth with hand and press slightly so that whey starts to drip. You will be able to see whey collected in the bowl.
  4. Make a knot with one edge of the cheesecloth and place something heavy over it. I have placed a small mortar. You can also place a bowl or something.
  5. Keep the entire setup in the refrigerator for 4-5 hours. If you have a hook, you can also hang the cheesecloth. Do remember to keep the bowl at the bottom. Ensure that the size of bowl is enough to collect all the dripped whey. The whey should not touch the curd which is in cheesecloth.
  6. After  4-5 hours, remove the cheesecloth from the refrigerator and open it. You will see that the hung curd is ready. It will be creamy and soft.
  7. In a small bowl, add 1 tablespoon warm milk and 1 pinch saffron strands (Kesar). Let the saffron strands soak in warm milk for a minute or two.
  8. Add the hung curd in a bowl and add ¼ teaspoon cardamom powder (elaichi powder), 2 – 3 tablespoon powdered sugar and the saffron-milk solution prepared in the above step. You can adjust the quantity of sugar as per your taste.
  9. With a whisk, mix all the ingredients together till smooth and sugar completely dissolves. You can also use a blender. Garnish shrikhand with chopped nuts and serve immediately or else refrigerate it.
