Sabudana khichdi is a delicious dish usually had during Hindu fasting (vrat) days such as Navratri, Ekadashi and so on. Served with sweetened curd (yogurt), sabudana khichdi is made with sago pearls (sabudana), potatoes, peanuts and few spices. Not only during fasts, this healthy and vegan recipe is also ideal for breakfast and any time snack. If you are not fasting you can also add veggies like onions and peas

To make non-sticky sabudana khichdi, it is very important that sago pearls (sabudana) are soaked well. Soak sago pearls for 5 – 6 hours in a ½ cup of water. Don’t use excess water for soaking as sago pearls will become soggy and khichdi will become sticky. If you are fasting, use rock salt (sendha namak) for cooking khichdi.

Stepwise recipe to make sabudana khichdi:

  1. Wash sago pearls (sabudana) 3 – 4 times in water. 
  2. Soak sago pearls in ½ cup of water for 5 – 6 hours. To check whether sago pearls have soaked properly, press a pearl between your fingers. If it gets smashed easily then they have soaked well.
  3. In a mixing bowl, add soaked sago pearls (sabudana). Now add 1 tablespoon of lemon juice, ½ teaspoon cumin powder (jeera powder), ¼ cup chopped coriander (dhania) and rock salt (sendha namak) as per taste. Mix everything well.
  4. Heat pan/tawa. Dry roast ¼ cup peanuts on heated pan/tawa. After peanuts get roasted, transfer them in a bowl and allow them to cool. Once they are cooled, peel them and grind them into coarse powder in a mixture grinder. You can also some of the roasted peanuts aside to add them whole.
  5. Boil 2 medium-sized potatoes in a pressure cooker. Peel and cut them after they are cooled.
  6. Heat 1 tablespoon oil in a pan. When oil gets heated, add 1 teaspoon cumin seeds (jeers). When cumin seeds crackle, add green chilies and curry leaves (kadi patta). If you have kept aside some of the roasted peanuts, add them at this step.
  7. Add chopped boiled potatoes and saute well.
  8. Now add powdered peanuts in the pan. 
  9. Now add sabudana mixture prepared in step 3. Mix everything well and cover the pan with lid.
  10. Cook only till sago pearls turn translucent. Overcooking makes sabudana khichdi very sticky.
  11. Serve hot sabudana khichdi with sweetened curd (yogurt).
