Moong dal halwa is a popular North Indian sweet dish made with skinless split green gram (moong dal) and loaded with ghee and dry fruits. This rich sweet is not only the most loved winter recipe but also has a place in most of the festivals and special occasions.

Though it takes a lot of time, patience and handwork to prepare it, the end result makes all the effort worthwhile when we relish nutrient-rich and mouth-watering Moong dal halwa.

Stepwise recipe to make moong dal halwa:

  1. Soak ½ cup skinless split green gram (moong dal) in 2 cups of water for 5-6 hours or overnight.
  2. Drain the water. In mixture grinder, add soaked moong dal and very little water(about ⅓ cup). Grind it into a soft paste.
  3. In a thick bottomed pan, add 5 tablespoons clarified butter (ghee).
  4. When the ghee melts, add moong dal paste into the ghee. Stir well till ghee mixes well with moong dal paste. Their will be an aroma of raw moong dal. 
  5. Keep stirring on low flame till the ghee gets absorbed by halwa. The halwa will starts to forms medium-sized lumps as the ghee gets absorbed and the aroma of raw moong dal goes away.
  6. Continue stirring, you will notice that the medium-sized lumps are now breaking down into small-sized lums and the slowly halwa is becoming granular.
  7. While halwa is getting cooked, in a deep bottomed vessel, add ½ cup milk, 1 cup water and ½ cup sugar. Put this mixture on a low flame until it starts to boil.
  8. On continuous stirring of halwa, you will notice that the ghee starts releasing from sides of the pan and the color of halwa has changed to brown.
  9. Now add the hot milk-water mixture in the halwa. The halwa will sizzle while adding the milk-water mixture.
  10. Mix thoroughly while stirring continuously.
  11. Keep stirring and cooking on a low flame till milk is completely absorbed in the halwa and ghee starts releasing from sides of the pan. Switch off the gas and remove the pan from the heat.
  12. Garnish with chopped nuts and serve warm.
