Coconut ladoo or “nariyal ladoo” is an easy sweet recipe made with raw or dried coconut. It is a quick recipe made during festivals such as Ganesh Chaturthi or Diwali.

There are many ways in which coconut ladoo is made. Most of them are made with milk, condensed milk or mawa (khoya) but I have skipped milk or condensed milk and made this recipe using only 3 ingredients: grated coconut, sugar and cardamom powder. Thus, it is a completely vegan reipe.

This delicious ladoo is also offered as a ‘prasad’ or ‘naivedya’ to Lord Ganesha or any other god during puja or auspicious occasions.

Stepwise recipe to make Coconut ladoo:

  1. In a pan, mix water and sugar. Stir till sugar dissolves in water. If you find impurities, then strain the sugar solution. I have skipped this step as my sugar was clean. Now put the pan with sugar solution on gas with low flame. With occasional stirring, cook the sugar solution until it starts to thicken. 
  2. Continue to cook till you get one string consistency of sugar syrup. To check sugar syrup consistency, dip a small spoon in syrup and lift out. Allow it cool for a few seconds. Touch the syrup with a forefinger. Now touch your thumb with your forefinger. Bring together thumb and forefinger and then gently pull apart. It will form a string. 
  3. Once you get one string consistency, immediately add 1 cup grated coconut into the sugar syrup and ¼ teaspoon cardamom powder (elaichi powder). Mix well and switch off the gas. In this recipe, I have used freshly grated coconut but you can also use desiccated coconut for this recipe. If you are using freshly grated coconut, dry roast it for a minute before adding it to the sugar syrup.
  4. Let the mixture cool down for a 1 -2 minutes. Now rub some oil on your palms and make small round balls from the mixture. Ensure that the mixture is not too hot or too cold while making ladoo. If the mixture gets cold while making ladoo, reheat the mixture till it becomes warm and start making ladoo again.
  5. Offer this ladoo as prasad or store it in an airtight container. They stay fresh up to a week without refrigeration.
