Bharwa baingan is an easy and tasty recipe that is made by stuffing brinjal/eggplant. The stuffing is generally made by a mixture of spice powder but you can also add powdered groundnut or desiccated coconut to make stuffing of your choice. In this recipe, I have made stuffing with grated potato to give it a twist.
